TYPE:

D.O.C. Rioja, Red (harvest last week of October 2.012)

GRAPE VARIETY:

Tempranillo 100%. Vines: 60-80 years.

VINEYARDS:

Located in Uruñuela, Cenicero and San Asensio. Medium yield: 32 Hls/Ha. Limestone Calcareous. Organic fertilizers. Manual harvest in cases of 6 kgs.

FERMENTATION:

Traditional elaboration process. Alcoholic fermentation for 11 days. Controlled temperature: 28º-30º.

MACERATION:

Maceration before fermentation for 72 hours and after fermentation for 20 days. Daily pumping over for 20 days so we aboid bitter flavors.

MALOLACTIC FERMENTATION:

Malolactic Fermentation in barrels.

AGEING:

22 months in French barrels: 70% and American 30% MEDIUM TOASTED. Rack each 4 months.

VINTAGE:

Excellent. Medium humiduty Winter, fresh spring and powerful budding. Dry summer with contrasted temperatures and the result of richer grapes full of poliphenoles.

TASTING NOTES: 

-Colour: Deep cherry lively. Garnet tints.

-Nose: Powerful, elegant and rich. Strong frutal character. Red fruits and balsamic notes. Mineral notes.

-Palate: Backbone, round tannins. Well-balanced and powerful flavors. Length, fruity and spicy tints.

RECOMMENDATIONS:

-Storage: dark places

-Storing temperature: 15ºC

-Serving temperature: 18ºC

FOOD PAIRING:

Roast and grilled red meat. Lamb, cured cheese.
