Red wine D.O. Ca. Rioja (Manual harvest the first week of October 2016)
Tempranillo 100%, 60-80 YEARS OLD.
Located in Uruñuela, Cenicero and San Asensio in Rioja Alta. Medium yield: 32 His / Ha. Limestone calcareous soils. Organic fertilizers. Manual harvest in cases of 6 Kgs.
100% destemming. Alcoholic fermentation for 11 days. Controlled temperature 28ºC - 30ºC
Maceration before fermentation for 72 hours and after fermentation for 20 days. Daily pumping over for 20 days so we avoid bitter flavors.
Malolactic fermentation in barrels.
22 months in 70% French and 30% American barrels. Medium toasted. Racking each 4 months.
Excellent. Medium humidity Winter, fresh spring and powerful budding. Dry Summer with contrasted temperatures and the result if richer grapes full of polyphenols.
