For the elaboration of this wine the vineyards are previously selected.
They are vineyards with yields between 5500 and 6500 kg/Ha and they have more
than 40 years.
During the elaboration two macerations were made: the first one in cold and the second one was made after the alcoholic fermentation in order to have a perfect extraction of the wine colours and aromas.
The alcoholic fermentation lasted 7 days and a temperature of 23-26ºC. During the elaboration the delestage, a technique of vinification, was used.
The elaboration of our wines begins in the vineyard itself and as a rule in our winery the process of maturation is controlled in all of them. So, after the analysis it was decided that the vintage should begin at the end of September. During the vintage there were sunny days and fresh nights that favoured the ripeness of the vineyard.
The winter gave to us soft temperatures and light frosts at the end of February. The spring was hot and there were moderate rainfalls. We do not suffer hailstorms.
The crop 2006 has not been qualified yet but personally we can say that it has given better wines to those of the year 2005 which was considered an excellent crop.
Ripen fruit cherry covered with intense edge. Powerful aroma to red wild fruits, fund of mature fruits with mineral shades. In the palate it is a rich and very powerful wine, full of fruity expressions.
